Loaded Baked Apples

Our primal play on the classic junk food appetizer loaded potato skins. Don't make too many as you will surely spoil your dinner with these. The only way to stop eating them is to run out of them. This recipe was featued in our 2012 Belmont Stakes celebration meal plan.

*While dairy is considered primal it is not considered paleo to most, however dairy products from goats are the closest to paleo as it gets for dairy!

PREP TIME: 5 minutes

COOK TIME: 10-15 minutes

MAKES: 8 pieces

TIPS: INGREDIENTS

1. These make a great appetizer or finger food for parties.

2. You can also try this with pears instead of apples.

3. Make sure you use uncured bacon as it is healthier for you.

4. Buy organic whenever possible.

 

4 Organic Apples (any red apple will do)
4 Slices Uncured Bacon (applewood smoked is best)
4-6 tbsp. Goat Cheese
1 Lime
Cinnamon

DIRECTIONS

1. Preheat oven to 350 degrees. 

2. Cut apples. Do not cut in half, instead cut to the right and left sides of the stem to create smaller pieces that are easier to bite into. Each apple should yeild two pieces. Set the rest of the apple aside for future use.

3. Scoop out a "pit" in the center of the apple chunks you cut and fill with goat cheese.

4. Lube a glass baking dish with coconut oil and place cheese filled apples inside. Bake 10-15 minutes depending on size of apples.

5. While apples are baking, cook bacon to desired doneness and set aside.

6. While bacon is cooking, take the remaining pieces of apple and cut "french fry" shaped spears. Cut two spears for each apple chunk (16 total). Place in a bowl and coat in fresh lime juice to prevent browning and add flavor.

7. Once done, remove apples from oven and place two lime soaked apple spears on top. Dust lightly with cinnamon. Finally, cut bacon into chunks and place on top using approx. 1/2 of a bacon slice for each. Serve and enjoy!
